The coffee beans are an amazing food that have gone through a process of transformation that delivers at the end an impressively complex drink.
We are lucky to live in a coffee producing country, Costa Rica. This country banned the production of robusta coffee because it wanted to make sure that it produced high quality coffee.
When we started to immerse ourselves in the world of coffee we discovered a specialty coffee farm, called don Eli. It is located on the mountains of Tarrazu, which is a coffee-producing area with a high altitude of around 1650 meters above the sea (5400 feats above sea).
The coffee is produced in a very small plantation that has various types of botanical varieties like Geisha, Red Bourbon, and Catuai. It uses different coffee processing methods like a washed, yellow honey, red honey, anaerobic and natural process.
The red honey coffee is made by an artisan process. It starts with traditional hand picking of the coffee berries which then move on to small batch beneficiary.
All of the coffee lots are cupped and receive scores of 86 and above. Buyers come from many parts of the world, like Japan and Russia, come to the farm to purchase these beans.
We are lucky to be able to purchase them and use them to make our coffee at home as well as to serve it to our customers at our coffee shop.
The coffee drink has a slightly acid flavor mixed with fruity notes. I really enjoy my cup of coffee every day elaborated with don Eli coffee beans.
